What about a pot pie or casserole? Shepherd's Pie might work ...my teenager loves that. Not sure I want to do that much cooking work today though lol. I will definitely do one this week. I think we are due for a dose of Tom's Meatloaf too this week - so good for leftovers in lunches.

Birria whats that? It is Mexican food. It is a beef roast slowly cooked for about 3-4 hours. You use California Chili Pods, beer, and other seasonings. You blend the chilis with the seasonings and beer. Then you put it over top over the roast and let it cook. Once you can rip it apart it is done.
